  • 1 pound ground beef
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1/2 cup chopped onion
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef and chopped onion until the beef is browned. Drain any excess fat.
  • Stir in the enchilada sauce, chili powder, cumin, black beans, and corn. Mix well to combine.
  • In a baking dish, layer 4 corn tortillas on the bottom.
  • Spread half of the beef mixture over the tortillas, followed by a portion of the shredded cheese.
  • Repeat the layering process: add 4 more tortillas, the remaining beef mixture, and cheese on top.
  • Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
  • Allow the casserole to cool slightly before serving.

Notes

Serve hot, garnished with fresh cilantro or slices of avocado. Pairs well with a side salad or Mexican rice. Store leftovers tightly wrapped in the refrigerator for up to 3 days, or freeze for longer storage.
