  • 2 cups cooked rice Use day-old rice for best texture.
  • 1 cup cooked chicken, diced Can be substituted with tofu or shrimp for variations.
  • 2 large eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tablespoons vegetable oil
  • 3 tablespoons bang bang sauce
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions
 

Preparation

  • Heat vegetable oil in a large pan over medium heat.
  • Add mixed vegetables and sauté until they become tender.
  • Push the veggies to one side of the pan and pour the beaten eggs onto the other side. Scramble the eggs until they are fully cooked.
  • Add in the cooked rice and diced chicken, mixing them into the pan.
  • Pour the bang bang sauce over the mixture and stir until everything is well combined.
  • Taste and season with salt and pepper as needed.
  • Serve hot, garnished with chopped green onions for that fresh touch.

Notes

Pairs well with tangy cucumber salad or crispy spring rolls. Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for up to 2 months.
