  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste For seasoning

For the Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Preparation

  • Cook your rice according to the package instructions and set it aside.
  • Cut the chicken breast into bite-sized pieces and season with salt and pepper.

Cooking

  • In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and sauté for 6-8 minutes until golden brown and cooked through.
  • While the chicken cooks, mix the sauce ingredients in a small bowl and adjust sriracha and honey to taste.
  • Once the chicken is cooked, add the mixed vegetables and cook for an additional 2-3 minutes.
  • Remove the skillet from heat, pour the sauce over the chicken and veggies, and stir well to coat.

Serving

  • Serve the Bang Bang Chicken Bowl over a mound of rice, garnished with chopped green onions and extra sriracha if desired.

Notes

For perfectly fluffy rice, rinse it under cold water before cooking to remove excess starch. Feel free to swap in your favorite vegetables or adjust the spice level with sriracha. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
