  • 2 large onions, thinly sliced
  • 2 tablespoons butter For caramelizing onions.

  • 1 cup Gruyère cheese, shredded Can substitute with Swiss or cheddar.
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons flour For thickening the onion mixture.
  • 1 teaspoon thyme
  • to taste Salt and pepper
  • Chopped for garnish parsley Optional for garnish.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Melt the butter in a large skillet over medium heat. Add the sliced onions and let them cook until caramelized, about 20 minutes. Stir occasionally to prevent burning.
  • Sprinkle in the flour and cook for an additional minute, stirring constantly.
  • Gradually pour in the broth while stirring to ensure the mixture thickens nicely.
  • Season with thyme, salt, and pepper to enhance the flavor.
  • In a large pot, boil salted water and cook the gnocchi according to package instructions until they float to the surface.
  • Combine the gnocchi with the onion mixture in a baking dish, ensuring everything is evenly distributed.
  • Generously sprinkle both the Gruyère and mozzarella cheeses on top.
  • Bake for 20-25 minutes or until the cheese is bubbly and golden brown.
  • Finish with a sprinkle of chopped parsley before serving warm.

Notes

To enhance flavors, serve with a mixed greens salad and a robust red wine. Store leftovers in an airtight container in the fridge for up to 3 days.
