  • 2 cups Fresh spinach Can substitute with kale or other seasonal greens.
  • 2 tablespoons Olive oil For drizzling.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1/2 teaspoon Red pepper flakes Optional, for added heat.
  • Fresh herbs, for garnish Optional.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, place a block of feta cheese right in the center.
  • Surround the feta with halved cherry tomatoes and a generous amount of fresh spinach.
  • Drizzle everything with olive oil, then season with salt, pepper, and a touch of red pepper flakes if desired.

Baking

  • Bake for about 20 minutes, until the tomatoes have softened and the feta is slightly golden.
  • Carefully remove the dish from the oven and crack eggs around the feta and tomatoes.
  • Return to the oven for another 10-15 minutes, or until the eggs reach your desired doneness.
  • Garnish with fresh herbs before serving.

Notes

Serve straight from the oven for a rustic touch. Pair with crusty bread, a light salad, or over a bed of quinoa or rice for a hearty meal. Store leftovers in an airtight container and consume within 3-4 days.
