  • 1 cup cottage cheese (4% fat recommended)
  • 4 large eggs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh chives, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika (smoked paprika for added flavor)

Optional Add-Ins

  • 1/4 cup diced bell peppers
  • 1/4 cup spinach
  • 2 tablespoons sun-dried tomatoes

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9-inch pie dish or an 8×8-inch baking dish.
  • Pulse the cottage cheese in a food processor until smooth.
  • In a mixing bowl, whisk the eggs before folding in the blended cottage cheese, Parmesan, chives, garlic powder, paprika, salt, and pepper.
  • If you’re using optional add-ins, stir them into the mixture at this point.

Baking

  • Pour the prepared mixture into the greased dish and bake for 15-17 minutes or until the eggs are set and the top is golden.
  • Let the baked dish rest for 2-3 minutes before serving.

Notes

Serve garnished with extra chives or pepper. Pairs well with fruit, avocado, or a salad. Store leftovers in an airtight container for up to 3 days.
