  • 1 cup unsalted butter, softened Can substitute with salted butter, reduce added salt.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup Baileys Irish Cream Can substitute with coffee-flavored syrup for non-alcoholic version.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Mini chocolate chips or white chocolate can be used for a different twist.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  • Beat in the Baileys Irish Cream, eggs, and vanilla until everything is well blended.
  • In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the creamed mixture, stirring gently until just combined.
  • Gently fold in the chocolate chips until evenly distributed.
  • Use a spoon to drop heaping spoonfuls of dough onto ungreased baking sheets.
  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown while the centers remain soft.
  • Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
