Wet Ingredients

  • 1 cup unsalted butter, softened Make sure butter is softened for easy creaming
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1/2 cup Baileys Irish Cream Adjust amount for preferred flavor
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-ins

  • 2 cups chocolate chips Substitute with dark or white chocolate if desired

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the Baileys Irish Cream, eggs, and vanilla extract until fully combined.
  • In another bowl, combine the flour, baking soda, and salt.
  • Gradually blend the dry mixture into the wet ingredients, mixing until just combined.
  • Stir in the chocolate chips evenly throughout the dough.
  • Drop rounded tablespoons of cookie dough onto ungreased baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are lightly browned.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week. They can also be frozen for up to three months.
