For the potato filling

  • 4 large potatoes The main ingredient for the base of the loaf.
  • 1 cup cooked bacon, chopped Can be substituted with turkey bacon for a lighter option.
  • 1 cup cooked sausage, crumbled You can use turkey sausage for a leaner version.
  • 1/2 cup cream cheese, softened Can be substituted with vegan cream cheese.
  • 1/2 cup shredded cheddar cheese Customize with different cheeses like pepper jack for heat.
  • 1/4 cup green onions, chopped Adds freshness and flavor.
  • to taste Salt and pepper Season according to preference.
  • 1 tablespoon olive oil To drizzle on top before baking for extra crisp.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Boil the potatoes in a large pot until tender. Once cooked, drain and let them cool just enough to handle.
  • Carefully cut the tops off the potatoes and scoop out the insides, leaving a small border along the edges.
  • In a mixing bowl, combine the scooped potato, bacon, sausage, cream cheese, cheddar cheese, green onions, and a sprinkle of salt and pepper.

Baking

  • Stuff the mixture back into the hollowed-out potato shells generously.
  • Drizzle the tops with olive oil.
  • Place the stuffed potatoes on a baking sheet and bake for 25-30 minutes until golden brown and heated through.
  • Serve warm and enjoy!

Notes

These potato loaves can be plated individually or as a stunning centerpiece. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to a month. Consider adding garlic powder or smoked paprika for enhanced flavor.
