Ingredients
  

Muffin Batter

  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons salt
  • 1 large egg
  • 0.5 cups milk
  • 0.25 cups unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples (about 1 medium apple)

Streusel Topping

  • 0.5 cups all-purpose flour
  • 0.25 cups packed light brown sugar
  • 0.25 teaspoons ground cinnamon
  • 0.25 cups unsalted butter, cold and cut into small pieces

Preparation

  • Preheat your oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt until well combined.
  • In another medium bowl, whisk the egg, milk, melted butter, and vanilla extract until everything is nicely blended together.
  • Pour the wet ingredients into the dry ingredients and stir gently until just moistened. A few lumps are perfectly fine—don't overmix!
  • Gently fold in the chopped apples, ensuring they are evenly distributed throughout the batter.

Streusel Preparation

  • For the streusel topping, combine flour, brown sugar, and cinnamon in a small bowl.
  • Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.

Baking

  • Divide the muffin batter evenly among the 12 muffin cups, filling each about two-thirds full.
  • Generously sprinkle the streusel topping over each muffin.
  • Bake in the preheated oven for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

Muffins are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to three days, or frozen for longer storage. Pair with a drizzle of honey or cream cheese for a special treat.
