Preparation

  • Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  • Season the chicken thighs with salt and pepper, then place them in your baking dish.
  • In a bowl, whisk together the apple cider, honey, Dijon mustard, minced garlic, balsamic vinegar, and fresh thyme until well combined.
  • Pour the glaze over the chicken thighs, ensuring they're evenly coated.

Cooking

  • Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Let the chicken rest for about 5 minutes, then drizzle it with any remaining sauce.

Notes

Pair with roasted seasonal vegetables or creamy mashed potatoes. For leftovers, store in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
