  • 2 cups shredded cooked chicken Rotisserie chicken works great!
  • 1 can (10.5 oz) cream of chicken soup Can substitute with cream of mushroom or cheese soup.
  • 1 cup sour cream Can use low-fat version for a lighter dish.

Topping Ingredients

  • 1 sleeve (about 30) buttery round crackers, crushed
  • ½ cup unsalted butter, melted

Preparation

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  • In a large bowl, combine the shredded chicken, cream of chicken soup, and sour cream until smooth. Spread the mixture evenly into the prepared baking dish.
  • In another bowl, mix the crushed crackers with melted butter until fully coated.
  • Sprinkle the buttery cracker mixture generously over the chicken layer in the baking dish.

Baking

  • Place your assembled casserole in the oven and bake for 30-35 minutes, until hot, bubbly, and golden brown.
  • Allow the casserole to cool for about 5 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat to at least 165°F for safe consumption. Enjoy with a salad, roasted vegetables, or garlic bread.
