A deliciously simple treat made with four ingredients, these date caramels are a healthy alternative to refined sugar sweets, rich in flavor, and vegan-friendly.

  • 1 cup packed medjool dates, pitted Ensure the dates are pitted for a smooth mixture.
  • 2 tablespoons creamy almond butter (or any nut/seed butter) Substitute with any nut or seed butter as desired.
  • 1 tablespoon coconut oil, melted Melt the coconut oil before mixing.
  • 1 cup chocolate chips (or an 8-ounce chocolate bar) Use dark chocolate for a richer flavor.
  • 2 teaspoons coconut oil, melted (for chocolate coating) Helps in smooth melting and coating.

Preparation

  • Soak the pitted medjool dates in a bowl of very hot water for about 10 minutes.
  • Once the dates have softened, drain them and place them in a food processor.
  • Add the almond butter and melted coconut oil, then pulse until the mixture is completely smooth.
  • Transfer the smooth date mixture into a 9×5-inch loaf pan lined with parchment paper.
  • Place the pan in the freezer for 2-3 hours, or until the caramel is firm to the touch.
  • Remove the loaf pan from the freezer, lift the set date caramel out, and cut into 12 small squares.

Chocolate Coating

  • In a heat-safe bowl, melt the chocolate chips and 2 teaspoons of coconut oil using either the microwave or double boiler until smooth.
  • Dip each square of caramel into the melted chocolate, ensuring it is fully coated.
  • Lift each caramel out and place it on a parchment-lined plate.
  • Repeat the dipping process for all caramel squares.
  • Place them in the fridge for 1 hour, or until the chocolate has hardened completely.

Notes

Store date caramels in an airtight container in the refrigerator for about a week. For longer storage, freeze them.
