  • 1 cup coconut milk Full-fat coconut milk is recommended for creaminess.
  • 2 tablespoons soy sauce Adjust to taste.
  • 1 tablespoon peanut butter Smooth peanut butter works best.
  • 1 tablespoon sriracha or chili sauce Adjust according to spice preference.
  • 1 cup mixed vegetables (like bell peppers, carrots, and cucumbers) Choose colorful, fresh vegetables.
  • 1 bunch fresh cilantro For garnish.
  • 1 unit lime wedges Serve on the side for extra zing.

Preparation

  • Cook the rice noodles according to package instructions. Drain and set aside.
  • In a saucepan, combine the coconut milk, soy sauce, peanut butter, and sriracha. Heat over medium heat until well combined.
  • Toss the cooked noodles with the sauce until they are well coated.
  • Add the mixed vegetables and toss gently to combine.
  • Serve in bowls, garnished with fresh cilantro and lime wedges.

Notes

Store leftovers in an airtight container in the refrigerator for 2 to 3 days. Add a splash of coconut milk or water when reheating to prevent noodles from drying out.
