  • Cook the gnocchi according to the package instructions. Once done, drain it and set it aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for one minute until fragrant.
  • Toss in the fresh spinach and cook until wilted.
  • Pour the heavy cream into the skillet, stirring well. Add the crumbled feta, allowing it to melt into the sauce seamlessly.
  • Gently fold the cooked gnocchi back into the skillet, ensuring everything combines beautifully.
  • Season the dish with salt and pepper to your liking.
  • Serve immediately, garnished with grated Parmesan if desired for an extra touch.

Notes

This dish can be customized with Greek yogurt for a lighter option or different greens like kale or arugula. Store leftovers in an airtight container in the refrigerator for up to 3 days.
