  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the cottage cheese, rolled oats, eggs, honey (or maple syrup), vanilla extract, baking powder, salt, and optional cinnamon.
  • Gently fold in the fresh blueberries, being careful not to crush them.

Baking

  • Pour the mixture into a greased baking dish, spreading it evenly.
  • Bake for 25-30 minutes or until it is set and lightly golden on top.
  • Allow to cool slightly before slicing and serving.

Notes

Serve warm or at room temperature. Add yogurt or extra cinnamon on top for an additional treat. Store leftovers in the fridge for up to 4-5 days or freeze individual slices for longer storage.
