Custard Cookies recipe 2

all-purpose/plain flour 2 cups
1/2 cup custard powder
1/2 cup pure icing sugar
250gm unsalted butter
1 tsp. vanilla essence

Instructions
Bring the butter to room temperature. Preheat the oven to 180 degrees C.

If you have a food processor, mix the butter with icing sugar and vanilla. Process for a couple of minutes or until well combined. You can use a hand-mixer.

Add the flour and custard powder. Pulse until JUST well combined. Do not over-process coz then your cookies won’t have a fine delicate crumbly texture.

Shape as desired and bake on greased trays! (12-15minutes)

I rolled teeny balls with my hands, placed them on the tray and flattened them slightly with a fork. Dip the fork in flour to avoid it sticking to the cookies. If the cookies crumble or crack during shaping, add a few drops of milk and try again.

For the custard filling:

100g softened butter
140g icing sugar, sifted, plus a little extra
2 tbsp custard powder
few drops yellow food colouring if you have any

2.When the biscuits cool, mix the butter, icing sugar, custard powder, and food colouring if you have any. Pipe or spread a little icing onto a biscuit, then sandwich with 1 or 2 more biscuits. Repeat until all the biscuits are used, then dust with a little more icing sugar.
